Whitespace, punctuation, and symbols are excluded; a Map counts each lowercase letter or number and returns text plus table rows.
How it works
After toLocaleLowerCase, each code point matching Unicode Letter or Number increments its count, and entries sort by count descending.
Example
Aa1! reports a:2 and 1:1.

- Counting is by code point rather than grapheme or syllable, and no special secondary order is defined for ties.

No. Only Unicode letters and numbers are counted.
